* Exported from MasterCook * Angel Bars Recipe By :Carrie Gargasz Serving Size : 36 Preparation Time :0:45 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Crust 1/2 cup butter 1/4 cup sugar 1 egg 1/2 teaspoon vanilla extract 1 1/4 cups flour, all-purpose 1/8 teaspoon salt Topping 2 eggs -- beaten 1 1/2 cups brown sugar 1/2 cup coconut -- flaked 1 cup chocolate chips 2 tablespoons flour, all-purpose 1/2 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon vanilla extract Icing 1 1/2 cups confectioner's sugar 2 tablespoons lemon juice Preheat oven to 350oF. Cream sugar and butter for crust. Beat in egg and vanilla. Stir in dry ingredients and pat into greased 9 X 12 or 9 X 13 pan. Bake 10-12 minutes. While crust is baking mix the topping ingredients together. Pour over hot crust and return to oven. Bake for 25 minutes until edges are brown and topping is set. Cool completely. When cool, mix confectioner's sugar with enough lemon juice (you'll probably need more) to get a good spreading consistency. Spread on bars and allow allow icing to set. Cut into 36 pieces. Variation I: Substitute 1 cup pecans for chocolate chips. Variation II: Substitute 1/2 cup pecans or 1/2 cup raisins for coconut.
